You surprise him with a homemade dinner and his favorite treat:
brownies!

Now, I had the best intentions for the brownies, and I was so excited to make them.
Chris and I watch Barefoot Contessa, on the food channel, everyday (sometimes more than once a day) and on a recent episode she made these chocolate peanut butter brownies that looked delicious, and Chris talked about them for days. So being the cute wife I am (well Chris thinks so), I decided I would make them for him, so when he got home he had scrumptious brownies to nibble on!

Well, damn you Ina Garten...
you make it look soooo easy, like you would have to be an idiot to mess up....
well I guess I am one big idiot
because those brownies overflowed like a freaking volcano.
I mean she said they would expand a bit, but nooooo they expand like no tomorrow. I am not lying that when I looked in to check on them after 15 min, half of the batter was on the oven floor, and we still had 15 min to cook.
I knew I was in even more trouble when I set the fire alarm off not once, but 3 times because of the smoke coming off the burning brownies on the oven floor.
needless to say, it was a total disaster and since most of the batter was gone, and the brownies were now thin, they pretty much burned to a crisp!
ohhhhh I was ticked. The batter tasted delish (and the stuff that survived aren't bad at all) and I was so excited for them...
I guess I can't bake!
But, I was determined to save dinner:
On the menu:
Chicken Roll Ups
Roasted Asparagus and Tomatoes
I started off by roasting chicken thighs with olive oil and s&p
oh with the skin on and bones in! Makes it ten times more juicy!
(also a trick, from miss Ina Garten, to make chicken sooo much better!)
These two pics are of what my kitchen looked like just from the brownies and roasted chicken. I can't be clean and organized when I cook. Those cooking shows are so deceiving where they make it look so nice and tidy...bull crap!

Our table setting!
yes, that is out plain house...we haven't painted or put up one picture decoration yet...slackers!
oh and a shout out to Walmart for the $5 flowers. I love Walmart. As much as it is gross and trashy, and I automatically feel like I need a shower after being in there...they have the best prices hands down. The chocolate chips were $2 cheaper there than Macy's!
I heart you Walmart!
Roasted veggies are sooooo good. (Also thanks to Ina--can you tell I love her)
Coat with olive oil and S&P (and then I added chopped garlic for added flavor) and roast for 20 -25 min in a 400 degree oven=perfection! (oh and then I added chopped basil after for a kick of herb freshness - oh I am so cool!)
Chris got me this cute vase last year! I love it!

Here is our meal.
I like to have some sort of sauce with everything I eat, so for the chicken roll-ups I heat up a can of cream of chicken soup (with one cup of water) on the stove to pour over top. It makes it that much better!

Yummy Yummy!
Well, at least we enjoyed our dinner.
(I couldn't even take a picture of the disaster brownies because I was so upset about it!)
I guess I am an okay cook, but sure not a baker!
I hate you brownies!
9 love notes:
Oh my gosh!!! That was THE most hysterical post I have ever read. Forget design...you need to be a writer. I've always said that I could be a gourmet chef, too, if someone gathered all of the ingredients, chopped them into cute little glass bowls, and all I had to do was look good (?) while adding each of the ingredients to the large bowl while being perky and chatting away about how much fun it is to cook. Not to mention that they always have a finished product ready and waiting to go, so it doesn't matter if the one you're mixing turns out or not. We all have cooking disaster stories. It's a wife's rite of passage! If you didn't, well, then, we'd have to hate you!!! :)
All i can say is.........you need your mouth washed out with soap! I guess I didn't do that enough when you were growing up. It was a pretty funny story and the story of MY life as you well know. My advice is to find a few things that you do over and over until you get them down pat and then never deviate from them, hence the same menu almost every Sunday. Nana used to tell me that cooking was like anything else you want to accomplish, you have to practice! You are a good cook and if you try those brownies again and put them in a larger pan then I bet they would be heavenly!
I am laughing so hard. You are so funny. I'm sorry about the brownies. How annoying. Your meal looked heavenly though. I love you Stace!
You are too funny!! I hate when things go wrong. I am proud of you for trying though. I too, LOVE Miss Barefoot! What other recipes of hers do you like? And what is this "chicken roll up" recipe? I want to try it!
STACEY! I haven't talked or seen you probably since high school! My sister said she found your blog so I had to check you out! CONGRATS on being married! Remember our HQ group! We had so many funny memories! We should get together that would be so much fun! Lets plan dinner or something! P.S. I suck at making brownies too! Well I can't wait to hear from you! Lyndsie
my blog is tyandlyndz.blogspot.com!
Stac: I am so SAD about your brownies!! I know how excited you were to make them.... Tell Chris it is the thought that counts! But PRACTICE MAKES PERFECT so just DO IT AGAIN & AGAIN!! LOVE YOU!
Stacey, you naughty little girl with the potty mouth! Ha, ha. That was the funniest story I've ever read (except for Steph's hair story).
...I'm sorry about calling you a potty mouth
so funny. and THAT in a nutshell is why I don't cook. The rest of the meal looks DELICIOUS though! Will you email me the recipe for the chicken roll ups?
The food was amazing just so everybody knows

thank you for the love note.
